To make som tum, you will need the following ingredients:

  1. 1 green papaya
  2. 1 tomato
  3. 1 carrot
  4. 1/4 cup peanuts
  5. 1 tablespoon dried shrimp
  6. 1/4 cup runner beans
  7. 1 tablespoon palm sugar
  8. 1 tablespoon tamarind pulp
  9. 1 tablespoon fish sauce
  10. 1 tablespoon lime juice
  11. 1 clove garlic, minced
  12. 1-2 chili peppers, minced

Instructions:

Peel and seed the green papaya. Shred the papaya using a grater or mandolin slicer.

Dice the tomato and carrot.

Chop the runner beans.

In a mortar and pestle, pound the peanuts, dried shrimp, garlic, and chili peppers until a coarse paste forms.

Add the palm sugar, tamarind pulp, fish sauce, and lime juice to the mortar and pestle and pound until well combined.

Add the shredded papaya, diced tomato, carrot, and chopped runner beans to the mortar and pestle and toss to coat in the dressing.

For a spicier som tum, add more chili peppers to the dressing.

If you don't have a mortar and pestle, you can make som tum in a food processor. Simply pulse the peanuts, dried shrimp, garlic, and chili peppers until a coarse paste forms. Then, add the palm sugar, tamarind pulp, fish sauce, and lime juice and pulse until well combined. Finally, add the shredded papaya, diced tomato, carrot, and chopped runner beans to the food processor and pulse until well combined.

Som tum can be stored in an airtight container in the refrigerator for up to 2 days. However, the flavor will be best if enjoyed fresh.
