Ingredients:
- 1 pound boneless, skinless chicken breasts, sliced lengthwise into thin cutlets
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes
- ⅓ cup sun-dried tomatoes, chopped
- 1 tablespoon fresh basil leaves, chopped
Instructions:
Season the chicken cutlets with salt and pepper. Dredge in flour and shake off any excess.
Heat the olive oil and butter in a large skillet over medium heat. Add the chicken cutlets and cook for 4-5 minutes per side, or until golden brown and cooked through. Transfer to a plate and cover to keep warm.
To the same skillet, add the garlic and cook for 1 minute, or until fragrant. Add the chicken broth, heavy cream, Parmesan cheese, oregano, and red pepper flakes. Bring to a boil, then reduce heat to low and simmer for 2-3 minutes, or until thickened.
Return the chicken to the skillet and cook for 1-2 minutes, or until heated through. Stir in the sun-dried tomatoes and basil.
Serve immediately over rice or pasta.
